Veggie Chowder

Ingredients

  • 2 c cubed peeled potatoes
  • 2 c reduced sodium chicken broth
  • 1 c chopped carrots
  • 1/2 chopped onion
  • 1 can cream style corn
  • 1 can fat free evaporated milk
  • 3/4 c shredded cheddar cheese
  • 1/2 c sliced mushrooms
  • 1/4 t pepper
  • 2 T bacon bits*****

Preparation

Step 1

In a large saucepan, combine potatoes, broth, carrots and onion; bring to a boil. Reduce heat; simmer, uncovered, 10-15 min or until vegetables are tender.
Add corn, milk, cheese, mushrooms and pepper; cook and stir 4-6 min longer or until heated through. Sprinkle with bacon bits.
