Ingredients
- 1/4-cup whole wheat flour. Cran-Orange Syrup :
- 1-1/4-cups all-purpose flour
- 4-1/2 - tsp. sugar. 1-cup fresh or frozen cranberries
- 4-tsp. baking powder. 1/4- cup sugar
- 1/2-tsp. salt. 1/2-cup OJ
- 1/4-tsp. baking soda. 2-TBS. water.
- 1 -egg. 2-TBS. maple syrup
- 1 -egg white.
- 1 - cup fat free evaporated milk
- 1/2 - cup orange juice
- 2-TBS. canola oil
- 1-tsp. grated orange peel
- 1/3-cup dried cranberries
- 3-TBS. chopped pecans
Preparation
Step 1
For the waffles:
In a large bowl, combine the flour, sugar, baking powder, salt & baking soda.
In another bowl, whisk the egg , egg white ,milk, OJ, oil & orange peel, stir into dry ingredients just until blended.
Fold in berries & nuts.
Cook as usual.
Syrup:
In a small pan, combine berries, sugar, & OJ. Bring to a boil. Remove from heat, cool slightly.
Remove 1/2-cup berries with a slotted spoon; set aside.
In a blender, combine the water syrup &remaining cranberry mixture; cover and process till smooth.
Pour into a serving dish, stir in reserved cranberries. Serve with waffles.
