Ingredients
- 2 T olive oil
- 1 lb stew meat
- 4 large carrots peeled and chopped
- 1 onion diced
- 2 cloves garlic, minced
- salt and pepper to taste
- 1/4 t thyme
- 1/4 t rosemary
- 1 large bay leaf or 2 small
- 2 c beef broth
- 2 T butter softened
- 2 T flour
Preparation
Step 1
In a large pot or skillet, brown stew meat in olive oil until browned on all sides, about 4 min. Pour in onions, carrots, garlic and spices. Cook another 5 min. Deglaze pan with beef broth. Cover and simmer for 2-4 hours or until meat is very tender. This would be perfect to cook in a crock pot. When meat is ready stir softened butter and flour together until incorporated and stir into the stew. Once it thickens slightly you are ready. Served really well over mashed potatoes.
