Orange-Avocado Chicken Breasts

Ingredients

  • 4 chicken breast halves
  • 2 tablespoons margarine
  • 1/2 teaspoon grated orange peel
  • 2/3 cup orange juice, divided
  • 1/3 cup chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/3 teaspoon ground ginger
  • 1/3 teaspoon tarragon leaves, crushed
  • 1 tablespoon cornstarch
  • 1 orange, peeled, sliced crosswise
  • 1 small avocado, peeled, pit removed and sliced

Preparation

Step 1

Melt margarine in a medium sized fry pan over medium heat. Add breast halves and cook, turning, about 10 minutes or until brown on all sides. Pour off all but 1 tablespoon margarine remaining in pan. Add orange peel, 1/3 cup orange juice, onion, salt paprika, ginger and tarragon. Reduce heat to low, cover and simmer about 30 minutes or until fork can be inserted in breast halves with ease. Remove breast halves to serving dish; keep warm. Stir together until smooth remaining 1/3 cup orange juice and cornstarch. Stir into pan drippings and cook, stirring, over low heat until thickened. To serve, pour sauce over breast halves and garnish with orange and avocado slices.
