Zucchini with lemon and thyme

Ingredients

  • 3 zucchini
  • 2 tsp olive oil
  • Salt and pepper
  • 1 tbsp lemon juice
  • 1 tsp thyme

Preparation

Step 1

Cut zucchini into large pieces. In a large skillet, heat 2 tsp olive oil over medium. Add half zucchini and toss to coat. Season with salt and pepper. Cook until browned in spots, 4 minutes. Transfer to a bowl, repeat with more oil and rest of zucchini. Stir together and add lemon juice and thyme. Season with salt and pepper.
