Florida Shrimp Newburg

Ingredients

  • 4 T butter
  • 4 T shallots, diced
  • 1/2 lb fresh mushrooms, sliced
  • 1 10 can cream of shrimp soup
  • 1 C half and half
  • 1/3 C dry sherry
  • 1 t ddry mustard
  • 4 T grated Parmesan cheese
  • salt and pepper to taste
  • 1 1/2 lb shrimp, coo,ed peeled and deveined
  • 4 puff pastry shells, baked

Preparation

Step 1

Melt butter in a large saucepan over medium high heat. Add shallots and mushrooms; saute for 3 minutes until soft. Stir in soup, half and half, sherry, mustard, cheese and salt and pepper. Reduce heat and simmer 10 minutes to blend flavors. Add shrimp and simmer over low heat for 5 minutes, stirring often. To serve, spoon shrimp and sauce into pastry shells. Can be served over rice or toast points if desired.
