Ingredients
- 1/4 cup kosher salt
- 1/4 cup sugar
- 1 pound ice
- 1 pound shrimp, unshelled
Preparation
Step 1
Bring 1 cup of water to boil in a small saucepan. Add salt and sugar and stir until the crystals have dissolved. Pour mixture into plastic bucket and add ice. When the ice has melted, add the shrimp and allow to soak about 1/2 hour for large shrimp (20 to 25 per pound), up to 1 hour for really huge ones. Remove shrimp from brine, pat dry, and cook immediately.
