Ingredients
- 1 1/2 lbs parsnips, peeled and cut into thin strips
- 1 1/2 lbs carrots, peeled and cut into thin strips
- 1/4 cup olive oil
- Kosher salt and black pepper
- 2/3 cup whipping cream
- 1/8 tsp cayenne pepper
Preparation
Step 1
In a large bowl toss the parsnips, carrots, oil and salt and pepper.
Spread on a rimmed baking sheet and roast.
Oven 375
Cook time: 45-55 minutes
Sauce
Whip cream and cayenne pepper. Bring to boil for 2-4 minutes. Pour over vegetables
