Shrimp Pad Thai, Simple

Ingredients

  • 8 oz uncooked thick rice noodles
  • 1 LB uncooked med. shrimp, peeled & deveined
  • 3 garlic cloves, minced
  • 2 Tbl, canola oil
  • 2 eggs, beaten
  • 1 C marinara sauce
  • 1/4 C soy sauce
  • 2 TBL brown sugar
  • 1/4 C chopped dry roasted peanuts
  • fresh cilantro leaves
  • 1 med. lime, cut into wedges
  • Sriracha Asian hot chili sauce (optional)

Preparation

Step 1

1. cook noodles according to pkg. directions

2. meanwhile, stir-fry shrimp & garlic in oil in lg. nonstick skillet or wok until shrimp turn pink
remove & keep warm
add eggs to skillet; cook & stir until set

3. add marinara, soy sauce & brown sugar
heat through
return shrimp to pan
drain noodles, toss w/ shrimp mixture

4. sprinkle w/ peanuts & cilantro
serve w/ lime & sriracha if desired
