Ingredients
- 8 oz uncooked thick rice noodles
- 1 LB uncooked med. shrimp, peeled & deveined
- 3 garlic cloves, minced
- 2 Tbl, canola oil
- 2 eggs, beaten
- 1 C marinara sauce
- 1/4 C soy sauce
- 2 TBL brown sugar
- 1/4 C chopped dry roasted peanuts
- fresh cilantro leaves
- 1 med. lime, cut into wedges
- Sriracha Asian hot chili sauce (optional)
Preparation
Step 1
1. cook noodles according to pkg. directions
2. meanwhile, stir-fry shrimp & garlic in oil in lg. nonstick skillet or wok until shrimp turn pink
remove & keep warm
add eggs to skillet; cook & stir until set
3. add marinara, soy sauce & brown sugar
heat through
return shrimp to pan
drain noodles, toss w/ shrimp mixture
4. sprinkle w/ peanuts & cilantro
serve w/ lime & sriracha if desired
