Chicken enchilada soup (homemade gourmet)

Ingredients

  • 3-4 Tablespoons Homemade Gourmet Seasoning
  • 3-4 Chicken Breasts (cooked and shredded) or 2 Cans chicken
  • 7 C water divided
  • 1 10oz can enchilada sauce(I use 2 cans)
  • 1 Lb velveeta cheese, cubed

Preparation

Step 1

In a large pot, add 5 cups water, enchilada sauce, and cheese. In a med bowl combine seasoning with 2 cups of water and whisk until well blended. Pour this into the pot. Bring to a boil: add diced chicken. Reduce heat to low and simmer 30 minutes, stirring frequently to prevent burning.
