Tomato Zucchini Bake

Ingredients

• 1 lb sliced zucchini
• 1 1/2 cups frozen corn
• 1 1/4 lb vine ripened tomatoes
• 1/2 cup bread crumbs
• 1/4 grated parmesan cheese

Preparation

Step 1

heat oven to 400
spray shallow baking dish with pam
alternately layer zucchini, corn, tomatoes, bread crumbs, and parmesan cheese
bake in center of oven for 30 minutes or until golden brown. Cover with foil and bake 10 minutes more or until veggies are tender. serve immediately
