Fiesta Chicken Tacos with a Mango Jicama Salad

Ingredients

  • Salad:
  • 3/4 c. julienne-cut peeled jicama
  • 1/2 c. sliced peeled mango
  • 1/4 c. sliced red onion
  • 1 T fresh lime juice
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • Tacos:
  • 1 T olive oil, divided
  • 1 lb sinless, boneless chicken breasts, cut into thin strips
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/8 tsp cayenne
  • 1 c. sliced red bell pepper
  • 1 c. sliced red onion
  • 1/4 tsp salt

Preparation

Step 1

1.) Combine all salad ingredients in a small bowl.

2.) Heat 2 tsp oil in a large nonstick skillet over medium-high heat. Sprinkle chicken evenly with chili powder, cumin, and cayenne. Add chicken mixture to pan; saute 3 minutes. Remove from pan.

3.) Heat remaining 1 tsp oil in pan. Add bell pepper and 1 c. onion; cook 3 minutes or until crisp-tender. Return chicken to pan and cook 2 min or until chicken in done. Sprinkle with 1/4 tsp salt.

4.) Heat tortillas and arrange salad, chicken mixture and lettuce.
