Squash casserole

Ingredients

  • 2 lbs yellow squash, diced
  • 1 medium onion finely chopped
  • 1 egg
  • Salt and pepper
  • 8 oz grated sharp cheddar cheese

Preparation

Step 1

Boil squash and onion until tender. Strain to remove all liquid and mash. Add egg, salt, and pepper, mixing well. Top with cheese and bake at 350 for 30 minutes
