Sausage skewers

Ingredients

  • 1 cup couscous
  • 12 oz chicken sausage, cut into 1 inch pieces
  • 1 large red onion, cut into chunks
  • 3 tbsp olive oil
  • salt and pepper
  • 1/4 cup parsley
  • 1/4 cup cilantro
  • 4 scallions, chopped
  • 1 tbsp white wine vinegar

Preparation

Step 1

Soak eight 8 inch skewers in water 15 minutes. Preheat a grill pan to medium heat. Prepare couscous as directed.
Toss sausage and onions in a bowl with 1 tbsp olive oil, season with salt and pepper. Thread onto the skewers, alternating. Grill, turning, until onions are softened and the sausage browns, 6-7 minutes.
Puree parsley, cilantro and scallions in a blender with 2 tbsp olive oil, vinegar, and 2 tbsp water. Season with salt and pepper. Brush skewers with pesto and cook, turning, until sausage is charred, 6-7 more minutes.
Toss couscous with half of the remaining pesto and season with salt and pepper. Serve with skewers and remaining pesto, for dipping.
