Ingredients
- sauce:
- 1/2 cup mayo
- 1 tbsp chili sauce (siracha)
- 2 tsp honey
- salt
- shrimp:
- vegetable oil
- 2 large eggs
- 3/4 cup flour
- 1/2 cup cornstarch
- salt and pepper
- 1 1/2 lbs small shrimp (peeled and deveined)
- scallions, sliced
Preparation
Step 1
Make sauce:
Mix mayo, chili sauce, honey, pinch of salt and 1 tbsp water in large bowl. set aside.
Make shrimp:
Heat 2 inches of oil in a big pot over medium heat until a thermometer registers 350. Meanwhile, whisk the eggs in a shallow bowl. Whisk together flour, salt and pepper, and cornstarch in another shallow bowl.
Working in batches, dredge shrimp in flour mix, dip in eggs, then return to flour mix to make a crust. Fry shrimp in hot oil until golden, 1-2 minutes. Transfer to a paper towel with a slotted spoon.
Toss shrimp in prepared sauce to coat. Garnish with scallions to serve.
