Quinoa with garlic and pine nuts

Ingredients

  • 1 cup quinoa, rinsed
  • 1/4 cup pine nuts
  • 2 tbsp olive oil
  • 2 cloves garlic, thinly sliced
  • 1/3 cup fresh parsley, chopped
  • 1 tbsp fresh lemon juice
  • salt and pepper

Preparation

Step 1

Place quinoa in saucepan and cook over medium heat until toasted, 2 minutes. Add 1 3/4 cups water or broth and bring to a boil. Reduce heat to medium and simmer, covered, until liquid is absorbed, 10-15 minutes. Remove from heat and let sit while covered, 2 minutes.
Meanwhile, toast the pine nuts in a skillet over medium heat, stirring, until golden, 3 minutes. Transfer to a plate. Add olive oil and garlic to skillet and cook over medium, stirring, 2 minutes, until golden. Transfer garlic to the plate, reserve the oil.
Fluff quinoa with a fork, add pine nuts, garlic, reserved oil, parsley, and lemon juice. Season with salt and pepper, toss.
