Cream of Potato Soup

Ingredients

  • 1 stick of butter
  • 2 c. diced potatoes
  • 1/2 c.chopped onion
  • 1 c.chopped celery
  • 1/2 c.diced carrots
  • 3 c. chicken broth
  • 2 c. milk
  • 2 T. flour
  • pepper and salt
  • 1 c. grated cheese

Preparation

Step 1

Saute butter in pan (do not brown) add potatoes, celery, onion, carrots and chicken broth. Simmer until vegetables are tender. Mix milk with flour and add to the cooked vegetables. If desired, at cheese.
