Mac n Cheese from easy Roux

Ingredients

  • microwave 1 Qt milk for 3 minutes (covered with saran wrap)
  • melt 6 Tbsp butter in skillet, add 6 Tbsp flour
  • whisk and slowly add warm milk
  • cook 1 lb pasta and drain

Preparation

Step 1

remove sauce from heat and add 8 oz monterrey jack shredded and 8oz sharp cheddar shredded. stir until melted. Add 1 1/2 tsp salt and 1/2 tsp pepper

add 1 tsp hot sauce (tobasco) and stir

add pasta and toss

take 1 1/2 cup panko crumbs and add 2 Tbsp olive oil toss then spread over mac and cheese and broil for 1 to 2 minutes.
