Crab and Cheese Quiche

Ingredients

  • 1 (9 inch) pie crust
  • 1/2 cup chopped onions
  • 1 tblsp. butter
  • 2 eggs
  • 3/4 cup heavy cream
  • 2 1/2 cups grated cheddar cheese (Monterey Jack or Swiss work well, too)
  • 1/2 tsp. thyme
  • Tabasco to taste
  • 1/2 cup crabmeat

Preparation

Step 1

1.Preheat oven to 350 degrees. Using a fork, pierce the bottom of pie crust all over and bake for 10 minutes. Set aside to cool.
2. In small skillet over medium heat, saute onions in butter until translucent, about 10 minutes.
3. In large bowl, mix sauteed onion, eggs, cream and cheese, stirring until blended. Add thyme,Tabasco and crabmeat; mix well. Pour into prepared pie crust.
4. Bake 35 to 40 minutes or until filling sets. It should be dense and firm.
