Easy Mexican Chicken and Beans

Ingredients

  • 1 lb uncooked chicken breast strips
  • 1 package (1 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (11 oz) Mexicorn, undrained
  • 1/4 cup water

Preparation

Step 1

Spray 10-inch skillet with cooking spray. Add chicken to skillet; cook over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.

Stir in seasoning mix, beans, corn and water. Cook over medium-high heat 8 to 10 minutes, stirring frequently, until sauce is slightly thickened.

Serve with tortillas and sour cream.

Can substitute Schwan's Fajita Chicken Strips, thawed, for the chicken and skip step one.
