Grilled Maine Scallops

Prepared with garlic spinach and cilantro thai pesto

Ingredients

  • 5 fresh large scallops
  • 2 bunches of spinach
  • 1 tablespoon butter
  • 3 cloves of garlic choped
  • peanut oil as needed
  • salt and pepper to taste
  • Thai pesto sauce
  • 1/2 bunch cilantro
  • 1/2 bunch Thai basil
  • 1/2 tablespoon chili garlic sauce
  • 1/2 tablespoon brown sugar
  • 1 tablespoon sesame oil

Preparation

Step 1

Season the scallops, and sauté in peanut oil until golden brown. Set aside.

Using the same pan, add the butter, chopped garlic and spinach leaves, and cook for a minute.

Place the spinach on the plate in small piles. Place a scallop on each pile.

Drizzle the thai pesto over the top of the scallops and serve.

Thai pesto sauce

Combine all ingredients in a food processor and set aside
