Acorn squash stuffed with sausage and apple

Ingredients

  • 2 acorn squash
  • 1/2 onion
  • 1 stalk celery
  • 3 garlic cloves
  • 1 lb sausage
  • 1 1/2 apples
  • 1/2 cup bread crumbs
  • 1/4 cup parm cheese
  • Tsp Rosemary
  • Salt and pepper to taste
  • Olive oil

Preparation

Step 1

Cut acorn squash in half, clean out seeds. Coat with olive oil and salt and pepper. Bake at 400 for 40 minutes. In the meantime prepare stuffing mixture. Sauté onion and celery add garlic and sausage, brown and crumble. Add apple and rosemary. Cook until Apple softens. Add bread crumbs and parm cheese, mix well. Fill squash with stuffing mixture and bake for an additional 20 minutes at 400. Sprinkle tops with parm cheese prior to serving.
