Super Summer Kale Salad

Ingredients

  • ¾ cup sugar
  • ½ cup vinegar
  • ½ t salt
  • ½ t pepper
  • ¼ cup olive oil
  • 1 bunch kale (10 oz) stems removed
  • ½ package frozen edamame shelled and thawed (16 oz)
  • ¼ cup red onion sliced thin
  • 1 cup shredded carrot
  • ⅔ cup blueberries
  • ½ cup dried cranberries
  • ½ cup cashew pieces
  • ½ cup roasted sunflower seeds

Preparation

Step 1

whisk sugar vinegar salt pepper and olive oil together until sugar is dissolved. set aside.

toss rest of ingredients together in a bowl and pour half the dressing to coat. refrigerate 4-6 hours. serve rest of dressing on the side
