Cajun Shrimp and Sausage Soup

Adapted from a recipe in the newspaper a long time ago... Spicy and yummy

Ingredients
- 2 Louisiana Hot Sausages (andouille works)
- 2 T butter or 1T butter/1T Olive Oil
- 1 large Onion thinly slivered
- 1 stalk celery thinly sliced
- 1 medium bell pepper, seeded and cut into thin strips
- 1 small dried hot red chili, crushed (optional)
- 1/4 t dried thyme
- 1/2 t salt
- 1/4 c uncooked rice
- 1 can (1 lb) tomatoes
- 1 c tomato juice
- 2 c homemade chicken broth
- 1/4 pound cooked, peeled small - medium prawns
Preparation
Step 1
Slice smoked sausage or remove casing from fresh sausage and crumble. Melt butter in pan (or half/half olive oil/butter) Add sausage, cook until brown. Mix in onion, celery, bell pepper, garlic, crushed chili and thyme; Cook, stirring often until onion is soft.
Mix in salt and rice. cook briefly til coated. Add tomatoes, coarsely chopped and their liquid, tomato juice and broth. Bring to a boil, cover, reduce heat and simmer for 20-25 minutes until rice is tender.
Stir in shrimp, heating just until shrimp are hot. Sprinkle with Parsley to serve.
