Crunchy Whole Grain Waffles with Peach Butter and Sour Cream

Ingredients
- Waffles:
- 1/2 cup dry four grain cereal
- water
- cooking spray
- 1 3/4 cups whole wheat flour
- 2 tsp. baking powder
- 2 TBS. sugar
- 1/2 tsp. salt
- 2 eggs separated
- 2 TBS. canola oil
- 1 1/2 cups non-fat milk
- 12 TBS. light sour cream
- mint sprigs
- fresh berries
- Peach Butter:
- 2 cups dried peaches
- 1 12oz. can unsweetened frozen apple juice concentrate
- 1 1/2 cups water
- 1 tsp. cinnamon
Preparation
Step 1
Peach Butter:
combine all Peach Butter ingredients in heavy pan
bring to boil over medium-high heat
reduce heat to low and simmer, uncovered
30 min.
remove and let cool
blend mixture until smooth
store covered in fridge until ready to use
Waffles:
place cereal in bowl and add enough water to cover by 2 in.
coat waffle iron with cooking spray and preheat
combine flour, baking powder, sugar, and salt in bowl and mix well
in another bowl mix yolks oil and milk
drain cereal add it, and liquid ingredients to dry ingredients
mix well
beat egg whites until stiff
fold into batter
use 1/2 cup batter for each waffle
cook about 6 min.
server with Peach Butter, sour cream, mint, and berries
