Pear and Vanilla Upside Down Pancake
A wonderful take on the decadent Apple Pancake tradition.

Ingredients
- 1 vanilla bean split
- 1/4 cup sugar
- 2/3 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 stick unsalted butter
- 1/2 cup buttermilk
- 2 large eggs
- 1 1/2 firm ripe pears
- 1 TBS lemon juice
Preparation
Step 1
preheat oven to 400
scrape seeds into sugar and mix well
sift flour, baking powder, baking soda, salt, 1 TBS vanilla sugar together
in 10 in. skillet, melt butter on low
remove butter
whisk butter, milk, eggs, 1 TBS melted butter into flour mix
let stand 5 min.
add slices of pear to vanilla sugar with lemon juice and arrange in buttered skillet
cook 8 min. until caramel in color
bake at 400 for 15 min.
pour batter over pears and bake at 350 for 15 min.
immediately flip onto plate and serve
