Strawberry and Blueberry Crumble

Ingredients

  • 1 3/4 cups plus 3 tbsp. all purpose flour, divided
  • 1 cup packed light brown sugar
  • pinch of kosher salt
  • 1/2 cup unsalted butter, cold, cut into small pieces
  • 4 cups strawberries, hulled and quartered
  • 1 cup blueberries
  • zest of 1 lemon
  • whipped cream or vanilla ice cream, optional

Preparation

Step 1

preheat the oven to 375. to make the crumble topping, mix 1 3/4 cup flour, sugar and salt in a medium bowl. use your hands to combine the butter into the flour until the mixture is in small lumps; set aside.

To make the filling, gently mix the berries, lemon zest and 3 tbsp. flour in a 9x9 baking dish. use a spatula or the back of a wooden spoon to flatten the fruit into an even surface.

Sprinkle the crumble mixture over the fruit, covering the filling as much as possible. Bake for about 35 mins, or until the fruit starts to bubble and the crumble is lightly browned.

Serve warm with fresh whipped cream or ice cream.
