Cucumber Kidney Bean Salad

Ingredients

  • 1 15oz. Cans Kidney Beans
  • 1 15oz. Can Garbanzo Beans
  • 1 Red Bell Pepper
  • 1/2 Cup Chopped Onion
  • 1 Clove Garlic, Minced
  • 1 1/2 Cucumber, Diced small
  • 1/2 Cup Celery, chopped
  • 1/2 Cup or Less Canola Oil
  • 1/4 Cup Apple Cider Vinegar
  • 1/2 to 1 tsp Honey
  • 1 tsp Tamari (soy sauce)
  • 1 Tbsp Dijon Mustard
  • 1 tsp Curry Powder
  • 1/4 tsp Paprika
  • Dash of Cayenne

Preparation

Step 1

1. In a Large bowl combine beans, garlic, peppers, onions, cucumbers and celery.

2.In a small bowl stir together oil, vinegar, honey, tamari (soy sauce), mustard, curry powder, paprika and cayenne.

3.Pour Dressing over bean mixture and toss gently, Chill for at least 1 hour before serving.

Serve over greens with a dollop of sour cream
