Oven Roasted Vegetables

  • red onion
  • broccoli
  • peppers
  • zucchini
  • mushrooms
  • etc.
  • 1 head garlic
  • olive oil
  • balsamic vinegar

Preparation

Step 1

Preheat oven to 375.
Line a baking sheet with parchment paper.

1. Cut vegetables into chunks & place on baking sheet.
2. Slice top off of garlic, brush cut off end with olive oil & wrap whole garlic in tin foil. Place on baking sheet.
3. Combine equal amounts of olive oil & balsamic vinegar.
4. Pour over vegetables.
5. Bake in preheated oven for 45 minutes.
6. Remove vegetables from oven & arrange on platter.
7. Unwrap garlic & squeeze cloves over vegetables.
