Pork tenderloin w Berry Port sauce

Ingredients

  • For the sauce:
  • 1 shallot, finely chopped
  • 1 t olive oil
  • 1 1/2 cup port wine or grape juice
  • 1 c chicken broth
  • 1 cup fresh or frozen blueberries
  • 1/2 cup dried cherries
  • 1/2 t minced fresh rosemary or 1/4 t dried rosemary crushed

Preparation

Step 1

Cook the tenderloin with rosemary, salt and pepper on rack in the oven.

In a saucepan, saute shallot in oil.
stir in the remaining sauce ingredients. Bring to a boil, cook until liquid is reduced by half
Cool slightly. Transfer to a blender, cover and process until blend.

Let pork stand for 5 min, slice and serve with sauce.
