Spanish Omelet

Ingredients

  • 5 large eggs
  • salt
  • 1 scallion, minced
  • 1/2 cup manchego cheese, grated
  • 3 slices serrano ham

Preparation

Step 1

Whisk eggs, salt and scallion in a bowl. Heat 9 inch skillet over medium and drizzle with oil. Add eggs, cook 3 minutes, running spatula around edges to let egg run under. sprinkle with cheese, then layer ham on one side. Cook until eggs set and cheese melts, 2-3 mire minutes. Fold in half to cover filling, serve.
