Mini Peach Crumbles

Ingredients

  • 4 t sugar,divided
  • 2 t plus 2tsp flour
  • 2 t rolled oats
  • pinch cinnamon
  • pinch salt
  • 2 t cold, unsalted butter cut into small pieces
  • 4 large ripe,firm peaches

Preparation

Step 1

1) preheat oven 375

2) in mini processor, pulse 2T sugar, 2T flour. oats, cinnamon and salt for a second. add butter and process 2-3 seconds til crumbly

3) cut peaches into 1/2" thick slices, place in bowl and toss with remaining 2T sugar and 2tsp flour. divide among 4 4oz ramekins; sprinkle with crumb mixture

4) place ramekins on foil lined baking pan. bake til tops are light golden and fruit is bubbly, about 35-40 minutes
