Portabella Stroganoff

Ingredients

  • 5 Large Portabellas, cut into strips
  • 1/2 cup beef broth
  • 3 Tbsp. butter/EVOO
  • 1/2 cup white wine
  • 1 cup onion, chopped
  • 1 Tbsp. brown sugar
  • 1/2 tsp. mustard (yellow)
  • 4 Garlic cloves, sliced thin
  • 1 cup of Sour Cream
  • 1 Tbsp. Worcestershire Sauce
  • Sprinkle of Tarragon
  • Salt and Pepper to taste

Preparation

Step 1

Saute onion, garlic, mushrooms in butter until tender. Add wine, broth, worcestershire sauce, brown sugar, mustard & tarragon. Simmer until liquid reduces to half. Add sour cream and continue cooking until warm. Salt & pepper to taste. Can thicken with corn starch. Serve over noodles.
