- 1 tbsp evoo
- 0.25 small Red Onion
- 2 tbsp. apple cider vinegar
- 1 tsp. whole-grain mustard
- 1 can lentils
- 1 crisp red apple
- 1 stalk celery
- 1 c. celery leaves
Preparation
Step 1
Meanwhile, in a large bowl, whisk together the remaining tablespoon oil, the onion, vinegar, mustard, and 1/4 teaspoon each salt and pepper. Add the lentils and toss to combine. Fold in the apple, celery, and celery leaves. Serve with the pork.
