Coconut Macaroons

Ingredients

  • 4 large egg whites
  • 1 cup granualted white sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure white extract
  • 1/2 cup cake flour
  • 2 1/2 cups sweetened coconut

Preparation

Step 1

Preheat oven to 325 degrees and line two baking sheets with parchment paper.

In a stainless steel bowl, over a medium saucepan of simmering water, warm the egg whites, sugar, and salt. When the moisture is warm to the touch, remove from heat and stir in the vanilla extract, flour, and coconut.

Place small mounds (1 1/2 inch) of the dough on the parchment-lined baking sheet, spacing several inches apart. Bake for about 15 to 20 minutes or until golden brown. Remove from oven and place ona wire rack to cool.
