Chicken and White Bean Chili

Ingredients

  • 1 lb navy beans, rinsed and sorted
  • 8 cups water
  • 1 1/2 cups chopped onion
  • 2 (4 oz) cans chopped green chilies, undrained
  • 4 cloves garlic, finely chopped
  • 2 tbsp chicken bouillon
  • 1 cup white corn, thawed if frozen
  • 2 tsp chopped fresh cilantro
  • 1 1/2 tsp cumin
  • 1 1/2 tsp basil leaves
  • 1/4 tsp ground cloves
  • 1/4 tsp cayenne pepper
  • 2 cooked rotisserie chicken breasts
  • shredded Monterey Jack cheese, optional

Preparation

Step 1

Combine water, beans, garlic and onions and cook over medium heat until soft, approximately 2 hours. Coarsely mash beans then add remaining ingredients. Heat through, about 15 minutes. Garnish with shredded Monterey Jack cheese if desired.
