Baked Baby Potatoes

Ingredients

  • 1 kg small new or small potatoes, scrubbed
  • 1 tbsp olive oil
  • salt and freshly ground pepper
  • 2 sprigs of rosemary, needles only, bruised

Preparation

Step 1

Preheat the oven to 220c. Cook the potatoes in a saucepan of boiling water, until just tender. Drain and pat dry with a clean kitchen towel. Drizzle just a little olive oil, then roll in salt, freshly ground pepper and the rosemary.
Place the potatoes in a roasting tray and cook in the oven for 25 mins until golden.
