Ingredients
- 3 lg baking potatoes (about 3 1/2 pounds)
- 1 c mayonnaise
- 3 T sweet pickle relish
- 2 T Dijon mustard
- 1/4 c chopped fresh flat leaf parsley
- 1 t salt
- 1 t freshly ground pepper
- 4 green onions sliced
- 2 hard cooked eggs, coarsley chopped
- 1 c grape tomatoes halved
- 8 bacon slices, cooked, and crumbled
Preparation
Step 1
1. Bring potatoes and salted water to cover potatoes to a boil. Boil 15-20 minutes until tender. Drain and cool.
2. Stir together mayonnaise and next 5 ingredients in a large bowl, add cooked potatoes, green onions and eggs, tossign gently until will blended. Gently stir in tomatoes. cover and chill 3 hours. Stir in bacon just before serving.
