BLT potato salad

Adding bacon and eggs makes this a great addition to your picnic!

Ingredients

  • 3 lg baking potatoes (about 3 1/2 pounds)
  • 1 c mayonnaise
  • 3 T sweet pickle relish
  • 2 T Dijon mustard
  • 1/4 c chopped fresh flat leaf parsley
  • 1 t salt
  • 1 t freshly ground pepper
  • 4 green onions sliced
  • 2 hard cooked eggs, coarsley chopped
  • 1 c grape tomatoes halved
  • 8 bacon slices, cooked, and crumbled

Preparation

Step 1

1. Bring potatoes and salted water to cover potatoes to a boil. Boil 15-20 minutes until tender. Drain and cool.

2. Stir together mayonnaise and next 5 ingredients in a large bowl, add cooked potatoes, green onions and eggs, tossign gently until will blended. Gently stir in tomatoes. cover and chill 3 hours. Stir in bacon just before serving.
