Chicken-Broccoli Casserole

Ingredients

  • 3 pkgs. frozen broccoli (spears or chopped), or asparagus, or use fresh
  • 6 chicken breasts, cooked
  • 3 cans condensed cream of chicken soup
  • 1 1/2 1 1/2 cups Hellmann's mayonnaise
  • 2 teaspoons lemon juice
  • 6 tablespoons sherry (or more)
  • 3/4 cup shredded sharp cheddar cheese
  • 3/4 cup soft bread crumbs
  • 2 tablespoons melted butter

Preparation

Step 1

Arrange cooked broccoli in 9 x 13" pan or large flat casserole dish. Cut chicken in large bitesize pieces and place over broccoli. Mix together soup and mayonnaise, lemon juice, sherry and pour over broccoli and chicken. Then sprinkle with cheese, then crumbs and drizzle the melted butter over the top. Bake covered at 350º about 1 hour, until bubbly and very hot.
