Ingredients
- 1 C CHOPPED ONION
- 1/2 C CHOPPED GR PEPPER
- 2 T butter/ware
- 2 c chopped chicken or turkey
- 1 4 oz can green chili peppers rinsed, seeded, chopped
- 3 T butter
- 1/4 c Flour
- 1 t Ground Coriander
- 3/4 th t salt
- 2 1/2 c chicken broth
- 1 c sour cream
- 1 1/2 C Shredded Mont Jack Cheese
- 12 6 inch tortillas
Preparation
Step 1
COOK ONION AND GREEN PEPPER IN 2 T BUTTER TILL TENDER COMBINE ONION MIXTURE IN A BOWL WITH CHOPPED CHICKEN AND GREEN CHILI PEPPERS. SET ASIDE
FOR SAUCE, IN SAME SAUCEPAN MELT 3 T BUTTER, STIR IN FLOUR, AND SALT. SET ASIDE.
For sauce, in same saucepan melt 3 T butter. Stir in flour, and salt. Stir in chicken broth all at once, cook and stir till thickened and bubbly,
cook and stir 2 min more. Remove from heat. Stir in sour cream and 1/2 C cheese. Stir 1/2 c of the sauce into chicken mixture. Fill each tortilla with 1/4 c of chicken mixture. Roll up. Arrange rolls in 9x13 baking dish. Pour remaining sauce over. Sprinkle with remaining cheese. Bake uncovered in 350 degree oven 25 minor bil bubbly.
