Patriotic Potato Salad

Ingredients

  • 14 small new red potatoes, scrubbed clean
  • 6 eggs, hard cooked, peeled and halved
  • 1 carrot, peeled and grated
  • 2 scallions, all white and 2 inch green thinly sliced
  • 3 tablespoons fresh dill weed
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon caraway seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 3/4 cup sour cream
  • 3/4 cup mayonnaise
  • 2 to 3 tablespoons heaping Grey Poupon Parisian mustard

Preparation

Step 1

Cook potatoes 25 minutes in salted boiling water. Rinse. Cool. Cut in half. Combine remaining ingredients with potatoes. Chill
