Ingredients
- 6 large baking potatoes
- 4 TBSP. butter or margarine
- 6 TBSP. heavy cream
- 2 well-beaten egg yolks
- 2 TBSP. parmesan
- salt and pepper to taste
Preparation
Step 1
Bake 6 large potatoes at 450 degrees until fork tender, about 1 hour. Cut in half lengthwise and scoop out pulp. Mash thoroughly and beat in butter or margarine, cream and egg yolks. Beat mixture vigorously until fluffly. Season with salt and pepper and replace in shells. Sprinkle with parmesan; bake 15 minutes at 400 degrees until tops are golden.
