Blue Cheese and Dried Fruit Terrine

Ingredients

  • 1 pound blue cheese at room temperature
  • 8 ounces mascarpone cheese at room temperature
  • 1 tablespoon honey
  • Freshly ground pepper
  • Handful chopped dried apricots, currants, chopped dried figs, chopped pistachios, chopped toasted walnuts or any other combination of dried fruit and nuts
  • Rustic country bread or crackers for serving

Preparation

Step 1

Mash the blue cheese and mascarpone together with the honey and pepper. Stir in the fruit and nuts. Wrap in plastic and shape into a terrine. Refrigerate for several hours or until firm. Serve with an assortment of rustic country breads or crackers.
