Ingredients
- 1 can black beans, rinsed & drained
- 1 can yellow corn, drained
- 1 can Rotel tomatoes, undrained
- 1/4 c finely chopped onion
- 3 T fresh chopped cilantro
- Juice of 1 fresh lime
Preparation
Step 1
Combine black beans, corn and tomatoes.
Add onion and cilantro. Stir to thoroughly combine. Add fresh lime juice & mix.
Serve as salad, side or with tortilla chips.
