Raspberry lemon grilled chicken

A sweet and savory chicken dish sure to wow your guests! This dish is great to breakout when spring is on the rise and fruit is at its peak!

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 pint + 1/2 c raspberries seperated
  • the zest and juice of 2 lemons
  • 1 tbsp fresh rosemary
  • 1 tbsp of fresh parsley + a few sprigs for garnish
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1/2 c extra virgin olive oil
  • 2 cloves garlic

Preparation

Step 1

In a food processor chop 1 pint raspberries, lemon zest, lemon juice, garlic, salt, pepper, rosemary and parsley. Add in olive oil and pulse until well incoporated.

Wash and pat dry chicken and place in a bowl or ziplock bag. Pour the marinade over chicken and mix until coated. Let stand for 1-4hrs.

Preheat grill for 5 mins on high. Reduce heat to medium-low add chicken and cook for 7-10 min on each side depending on the size of breast.

Garnish with remaining raspberries and parsley and serve.
