Ravioli Casserole

We think you’ll love this super simple and easy-to-prepare ravioli casserole, which is perfect for a weeknight meal. Just add a quick salad and call it a night!

Ingredients

  • Nonstick spray
  • 1 tablespoon olive oil
  • One 12-ounce package fully cooked chicken sausage, sliced diagonally into 1/2-inch pieces
  • One 28-ounce jar good quality red sauce
  • 1/2 cup fresh basil, torn
  • One 24-ounce package frozen cheese ravioli
  • 2 cups shredded part skim mozzarella cheese
  • Kosher salt and freshly ground pepper, to taste

Preparation

Step 1

Heat oven to 350 degrees F. Spray a 2-quart casserole dish with nonstick spray.

Bring a large pot of salted water to a boil. Add ravioli and cook until they float to the surface of the water. Drain and reserve.

Heat olive oil in a large sauté pan over medium-high heat. Add the sausage and sauté until browned, about 4 minutes. Stir in red sauce and simmer on medium heat for 5 minutes. Turn off heat and stir in basil. Add cooked ravioli to the red sauce and toss through to coat

Add half the sauced ravioli to the casserole dish and sprinkle with roughly half of the cheese, top with the remaining ravioli and cheese.

Bake for 25 minutes until cheese is melted and bubbling.
