Minced Clam Chowder

Ingredients

  • 3 strips bacon, cut in small pieces
  • 1 cup potatoes, thinly sliced
  • 1 tb onion, minced
  • 2 cups milk
  • 10 crackers, rolled
  • 1 tb butter
  • 1 tsp salt
  • 1/8 tsp pepper
  • 2 7oz tins of minced clams

Preparation

Step 1

1) Fry bacon and remove grease. Add potato and onion. Cover with water. Simmer until potato is tender. Add milk, crackers, butter, and seasonings. If thicker chowder is desired, thicken with 2 tb flour. When hot, add minced clams, including juice. Simmer 5 minutes longer.
