Baked Bananas Creole

Ingredients

  • 2 tb butter or margarine, melted
  • 1-2 tb brown sugar
  • 1/4 tsp cinnamon
  • 2 tsp lemon juice
  • 2 tb rum (optional)
  • 2 bananas

Preparation

Step 1

1) Preheat oven to 350 degrees. Add sugar, cinnamon and a pinch of salt to butter and blend. Add lemon juice and rum.

2) Peel bananas and cut in half lengthwise and then crosswise. Arrange in one layer in an overproof dish. Pour butter mixture over bananas.

3) You can do ahead to here, cover and refrigerate overnight.

4) Bake uncovered for 20 minutes until bananas are tender, basting once.
