Cucumber Yogurt Soup

Ingredients

  • 1 cucumber
  • 2 cups yogurt
  • 2 teaspoons white vinegar
  • 1 teaspoon olive oil
  • 1 teaspoon dried mint
  • 1/2 teaspoon dried dill weed
  • salt

Preparation

Step 1

Peel cucumber and slice lengthwise in half. Scoop out seeds with teaspoon. Grate coarsely. In deep bowl stir yogurt with large spoon will smooth. Gently beat in rest of ingredients. Refrigerate at least 2 hours.
