Zucchini Parmesan

Ingredients

  • 1/2 to 2 tsp minced garlic
  • 1 med onion, sliced in half rings
  • 1 tbs olive oil
  • 4 med zucchini, cut into 1/4 inch slices
  • 1 can 14 1/2oz Italian diced tomatoes, undrained
  • 1 tsp seasoned salt
  • 1/4 tsp pepper
  • 1/4 cup grated Parmesan cheese

Preparation

Step 1

1. In a large skillet, saute onion and garlic in oil. Add zucchini, cook and stir for 4-5 minutes or until tender crisp.

2. Stir in the tomatoes, seasoned salt and pepper. Simmer, uncovered for 9-10 min or until liquid is absorbed and heated through. Sprinkle with Parmesan cheese. Serve with slotted spoon.

Alternative: Add 1 lb ground beef or turkey, browned.
